What Is a Healthy Diet & A Curried Squash & Lentil Bake | Deliciously Ella
1 min read
We’re talking healthy diets, supplementing and cooking today. Everything we talked about is linked here: https://blog.cytoplan.co.uk/plant-based-nutrition-guide/
Ingredients
– 2 tbsp olive oil
– 1 red onion
– 2-3 cloves of garlic
– 1-inch ginger, grated
– 2 tbsp curry powder
– 2 cups kale, washed and roughly chopped
– 1 cup butternut squash, chopped
– ¾ cup green lentils
– 2½ cup water or vegetable stock
– 1 x 400ml tin of coconut milk
– 1/3 cup sundried tomatoes
– Toppings: 1 handful coriander, toasted coconut, pumpkin seeds
– Salt & pepper, to taste
Method
Preheat oven to 200c.
Add 1 tbsp olive oil to a pan and sauté onion until tender. Add garlic, ginger, curry powder and lentils and sauté for a further minute. Add water and bring to the boil. Then reduce heat to a light simmer, cover and cook for 20 minutes, until the lentils are softened, but still with a bite (al dente).
While the lentils are cooking, peel and dice butternut squash and place on a roasting dish with 1 tbsp olive oil, salt and pepper. Roast for about 15-20 minutes or until al dente. Leave the oven on.
Once the lentils are cooked, turn off the heat and stir in coconut milk and kale. Allow the kale to soften for 1-2 minutes and then stir in the butternut squash.
Place mixture into the baking dish used for roasting your squash and bake for 15mins.

look at my two sisters who just made food but feel harmful, I look enthusiastic and the way to make their food looks good and delicious
Hi Ella thank you so much for this informative video!!!
Just a small tip for removing skin off of ginger is to just scrape it off whether with a spoon or just the same knife you're cutting up with. You'll notice you save quite a lot of the ginger (:
You recipe is not a copy paste post?
Sad day
I love this and all of the information! Thank you both!
what a load of bollocks. Let's all take synthetic pills to be healthy
Oh Ella I just love you and your channel! Thank you so much for sharing all your recipes and information. Best of luck with the new baby, becoming a parent is the best most exciting adventure you'll ever take!
Thank you both Ella & Tracy you are stars:-))) – I unfortunately did not get the name of the oil Tracy recommends for the Omega 3 supplements…could you kindly let me know if you have time? Many thanks and loads of love xx
Man, those bangs are distracting. :-I
Amazing content and delightful recipe ❤️🙌🏻✨🌸
… spinach is not a "good or high source for iron"… there are much better sources!
Can I use sweet potatoes instead of butternut squash
Amazing looking dish, really great info and what a gorgeous kimono!! 💕
yes more videos!
Very informative, loved this video. You are glowing Ella! 💜
Do you think you could make this as a lasagna dish? I’m thinking egg free spinach lasagna and taking just the solid part of coconut milk to keep it less liquid, right? x
This looks so delicious! Ella, you look so beautiful and healthy. Congrats on your pregnancy. 🙂
Excellent recipe apart from the oil. There's research that shows that oils aren't good for your health. They increase your chances of heart disease. Vege source has a video with a talk by Dr. McDougall that discuss this.
😍😍
Considering supplements, I can also recommend "omega3-Loges-vegan" and "floradix-plus-B12-vegan". Calcium should better be taken from natural sources such als mineral water and food. And low fat milk products for those who are not strictly vegan. 😉
Get in my belly, that looks amazing 🙂
Thanks for the idea what to cook today! And I just love Tracys kimono/jacket!
Could you please give oil-free alternatives wither the recipes too? I have a tough time with oil in my foods; it really upsets my stomach and digestive process in general. Thanks! 😁
This looks so nice. I will be having a go at making this one
